While topping your pizza with high-quality and fresh ingredients certainly matters, the flavor all comes down to the dough and the heat of the oven. A wood-fire pizza oven reaches an average temperature of 900 degrees Fahrenheit. The high temperature means a quick cook time, usually only 60 to 90 seconds. When you’re cooking a pizza that quickly and that hot, the dough has to be just right; otherwise, you’ll end up with a dry, burnt mess instead of the perfectly crispy on the inside and chewy on the inside crust that we love.

To achieve that perfect texture, we keep the ingredients of the dough to the basics:  water, flour, salt, and yeast. Pizza dough cooked at lower temperatures often includes oil or sugar for crispiness, but those ingredients burn quickly in high heat. Hydration is also crucial for wood-fired pizza dough. If the dough doesn’t have enough water, it will dry out immediately in the high heat of a wood-fire oven. Keeping the hydration between 65 and 70% creates an airy, chewy interior and a perfectly crisp exterior.
